1 cup yellow onion1 clove of garlic2 tblspn Olive oil5 tblspn ground cumin2 tblspn chili powder1 can of petite cut tomotesMeatballs1 pound ground beef 97/31 egg1/2 cup chopped cilantro1/2 cup panko bread crumbs1/2 cup minute rice uncooked1/2 tspn oregano1 tspn garlic powdersalt and pepper to tasteMake into 1.5 inch meatballs2 Zucchini's sliced2 Carrots chopped2 celery chopped1 quart of beef broth salt, pepper, and more cumin to taste at the endgarnish with lime juice and cilantro
serving size 2 meatballs and 1.5 cup of soup
In large pot heat oil and brown onion and garlic with salt and pepper. Add Cumin and chili powder stir add broth and tomatoes and bring to boil. In a bowl add all ingredients for Meatballs mix well and make into 1.5 inch meatballs add to boiling pot. Boil for 10 minutes add chopped veggies cover and boil for 2 hours or until carrots are soft. If needed add more Cumin, Salt and pepper. Add 1 cup of minute rice, turn off heat and stir. let sit 10 minutes and serve. Garnish with a lime squeeze and fresh cilantro.
