Protein Pancakes

Ingredients
1/2 cup oats1/2 cup nonfat cottage cheese4 large egg whitesdash of cinnamonsugar free maple syrup*optional: fresh fruit
Directions
Put oats, cottage cheese, egg whites, and cinnamon in blender. Mix until smooth.

Use a 1/4 cup measuring tool to spoon batter onto medium heat griddle.

Watch for bubbles to appear and then flip onto other side. Let cook for another minute or 2 and then plate.

Add syrup and fresh fruit to taste.

    I love these pancakes. I ususally eat them after my workouts, but now I have them for breakfast on Saturdays. Sometimes I use the Quaker High Fiber Cinnamon Swirl oatmeal for extra fiber. Thank youfor posting this recipe. It is a new favorite. - 4/7/09

    I followed some suggestions of the previous reviews and added 1/2 tsp of baking soda for lift. I did add some flax meal 1tbsp for texture and 1/4 cup flax milk to thin a bit. You will definitely need a nonstick pan. I don't own any so I baked this in the oven. Taste is good and they are filling. - 10/14/17
