Mo's Mini Meatloaf

Ingredients
Extra Virgin Olive Oil2 carrots, diced2 celery stalks, diced1 small onion, diced1 tbs tomato paste.5 cup of panko bread crumbs1 lb ground beef1 heaping tsp of pulsed garlic1 eggsalt and pepper to taste (or grilled seasoning)*Option to add worcestire sauce and parmesan cheese
Directions
Dice carrots, onions, and celery. Heat in skillet for few minutes with EVOO, just enough to make them sweat. Remove from heat to cool.

Take thawed ground beef and add tomato paste, garlic, bread crumbs, egg, salt, pepper, and cooled veggies. Mix well.

Shape meatloaves into patties. Should yield about 6-7 patties. Cook in skillet with a drizzle of EVOO.

Serve with yummy potato cakes or add ketchup to the tops for a more traditional meatloaf taste.
