English Muffin breakfast sandwich

Ingredients
Canadian Bacon, thin sliced, (1 serving = 2 slices.)1 Egg, poached or fried with spray Pam1 - Thomas Light 100 calorie English Muffin1 slice - Kraft American Slices 2% cheeseSpray Pam - Original flavor
Directions
Poach or fry (with Spray Pam veg. oil spray) 1 egg.
Over medium heat, place english muffin, open & face down, onto skillet already sprayed with Pam veg. oil spray. Place 2 canadian bacon slices in the same skillet on the other side & brown lightly on each side.
Once canadian bacon is lightly browned, & english muffin is lightly browned, place poached or fried egg onto muffin. Then, layer with 1 slice of 2% cheese & canadian bacon.
Tastes better & is so much healthier than the McDonald's version!! Enjoy!! Lots of protein & REALLY hits the spot!!

    I make something similar - I use a slice of turkey bacon that I cut in 1/2 to fit the muffin. I toast the muffin and sometimes I use egg substitute or egg whites. - 5/21/08
