2 oz shredded low fat cheddar2 weight watchers whole wheat tortilla wraps2 large eggsCooking Spray - Canola Oil2 Tablespoons salsa2 Tablespoons greek style plain yogurt1 tsp chopped cilantro1/4 cup chopped red bell pepper1/4 cup chopped onion
Makes 2 servings
Heat pan to medium, spray pan with cooking spray.
Add onion, red pepper and cook until soft
Beat eggs and add to pan. Stirring until cooked. Remove from heat
Place 1 tortilla on a plate, spread 1/2 the yogurt and 1/2 the salsa on the tortilla, add eggs in a strip down the middle. Top with cheese and cilantro. Roll up and enjoy!
