Oven Chicken Risotto

Ingredients
Reduced fat margarine, reduced sodium chicken broth, arborio rice (short-grain), onion, salt (1/2 tsp), chicken breast, fresh mozzarella, grape tomatoes (halfed), shredded fresh basil.
Directions
MAKES 6 SERVINGS
Cut chicken into small pieces and cook in pan with cooking spray. Preheat oven to 400 degrees, place margarine in 13x9 baking dish, bake 5 minutes or until melted. Stir in broth, rice, onion (diced), and salt.

Bake, covered, at 400 degrees for 35 minutes. Remove from oven. Fluff rice with a fork. Stir in chicken, mozzarella, and tomatoes, sprinkle with shredded basil.

My family ate this with a side of green beans. Enjoy!
