Cabbage and Lima Bean Soup

Ingredients
3 small carrots, sliced2 small onions, chopped1 TB Canola oil2 cans no-salt tomatoes2 cups water4 cups chopped cabbage1 1/2 cups frozen lima beans1/4 tsp salt and 1/2 tsp pepper 2 TB parsley
Directions
Saute carrots and onions in oil for about 10 minutes. Add remaining ingredients except parsley and bring to a boil. Lower heat and simmer for 15 minutes. Add parsley and serve.
