Cousin David Hot Szechwan Chicken

4 chicken breasts2 tbs soy sauce1 tbs dry sherry2 tbs cornstarch6 (or less) dried red peppersSauce:2 tbs sherry2 tbs dark soy sauce2 tsp brown sugar1 tsp sesame oil1 tsb worcestershire sauce1 tbs water3 tbs peanut oil
Cut boneless skinless chicken in small pieces. Marinate it in the soy sauce , sherry and cornstarch.
Combine sauce ingredients and set aside.
put peanut oil in hot frying pan or wok add red pepper pieces cook 15 seconds Add the chicken marinade and all, cook over high heat stirring constantly for 10 min. Add the sauce mixture and cook until thickens.
Serve over cooked rice.
