Dinah's Low Carb Cream of Asparagus Soup

Ingredients
1 15.5oz can Asparagus cut spears1/2 C heavy cream1 C chicken broth1/2 C diced onion3T Buttersalt & pepperShredded Parmesan cheese
Directions
In a food processor puree the can of asparagus until thick, set aside. In a pan on the stove melt the butter and sauté the chopped onion until tender (5-7 min). Add the cooked onion to the asparagus mixture and puree again. Add this onion/asparagus mixture to a sauce pan and heat, don’t boil. To his mixture add 1C chicken broth, and ½ C heavy cream. Continue to heat (don’t boil) over low heat for about 8 minutes, until very hot. Add salt and pepper. Serve warm soup with a tsp of parmesan cheese sprinkled on top.
Makes 4 servings, 1 cup each.
