Avgolemono soup

Ingredients
Chicken Broth, 6 cupIsraeli couscous TJ's, 100 gram(s), or orzo or riceEgg, fresh, 4 large Lemon juice, 5 tbsp (about 1.5 medium lemons)Salt, 1 tsp or to taste6 oz cooked chicken breast meat, cut into cubes
Directions
Bring broth to boil. Put couscous (orzo, rice) in and cook until tender (5 min for couscous, 10 for orzo, 20 for rice).

Meanwhile, whisk eggs and lemon juice together.

Salt broth to taste. Slowly add about 1 c of broth to lemon/egg mix, whisking as you go. Pour egg mixture into pot with soup. Bring to simmer, but don't boil.

Heat chicken covered for a minute in the microwave. Put 1.5 oz of chicken in the bottom of each of 4 bowls. Ladle 1.5 c soup over top.
