Mini Yorkshire Puddings

Ingredients
1 egg4 oz plain flour10 fl oz 2% milkPinch of salt1 tbsp lard/crisco
Directions
Whisk the egg into the flour and salt. Add the milk a little at a time until you have a smooth batter.

Divide the fat between 20 mini muffin tins and heat in a 220 degrees C oven until smoking hot. Half fill each cup with the batter and cook for 15-20 minutes, until puffed up and golden.
