Healthy Pumpkin roll

Ingredients
1 large egg1/2 c. egg whites 1/8 c. brown sugar packed3/4 c. sucralose (Splenda) 1 tsp Vanilla1/2 - 15oz can Pumpkin Sift together:1/3 c Oat bran 1/3 c. Flax meal1/3 c. Whole wheat flour1 1/2 tsp baking soda1 tsp Ground cinnamonFilling:1- 8oz fat free cream cheese softened4 oz of cool whip - light1/2 c. sucralose (Splenda)1 tsp Vanillamix together, beat well.
Directions
Beat eggs untill frothy, add pumpkin, vanilla, brown sugar and sucralose. Beat mixture an additional 3 min. Fold in sifted dry ingredients, till thoroughly mixed. Spread in a non-stick jelly roll pan that has been sprayed with Pan Spray.
Bake at 350* for 8 min. Remove from oven. Invert hot cake on a piece of waxed paper and roll up. Let cool. Spread filling evenly over cake. Re-roll cake. Cover and refridgerate. Yields 12 servings Very Very good!!

    AHHHH!!! Im getting OLD and BLIND..Im making this delish sounding Pumkin Roll now and I put a whole can of pumpkin in it..Waaa! I thought it said 12-15 oz can of pumpkin..Ha ha! Wish me luck..I probably wont be able to roll it but Ill try and make something with it.. - 11/14/12
