Asian Cauliflower Fried Rice

Ingredients
* Cauliflower, frozen, i package * Shallots, 2 * *1/2 yellow onion, raw * Mushrooms, fresh, 5 medium * *Ginger Root - 1 inch piece, grated * *Bragg's Liquid Amino Acid, 1 T. * Cilantro, raw, 3 tbsp * * Large Omega-3 -- 1 egg * *Peanut Oil, 1 1tsp salt and pepper to taste
Directions
Pour peanut oil into wok and heat. Whisk egg with salt and pepper and coconut milk or water. Cook as a small omlette, set aside and slice into strips.
Saute chopped onion and mushrooms until golden. Add shallots and ginger and salt and pepper and stir until fragrant, 30 seconds.
Add cauliflower which has been defrosted and pulsed in a food processor until "rice-like". Mix in amino acids and cover. Turn heat to low and cook 5 minutes. Add egg strips and cilantro and serve.
