Spaghetti Squash w/ Tomato Sauce

Ingredients
2 Whole Spaghetti Squash2 Large Fresh Tomatos chopped1 Red Pepper chopped1 Package (8oz) Sliced MushroomsDried Spices*Cilantro*Garlic Powder*Parsley*RosemarySalt and Pepper to taste
Directions
Poke holes all over the outside skins of the Spaghetti Squash. Place both on a baking sheet in a 400 F Degree oven. Bake for 60 mins and let cool until safe enough to handle.

While the squash is cooling (takes about an hour)
chop the Tomatos, Red Pepper, and Mushrooms.

When the squash is cool enough to handle, start to cook the Tomato, Red, Pepper and Mushrooms and spices in a skillet with your choice of oil. Use Spice amounts to your liking, it may take a few times to figure out what you prefer. Cook until the veggies are tender and heated all the way through.

When the Tomato mix is finished. Cut the Squash in half, and remove the seeds.Then scoop out the meat of the quash making it stringy. (It should resemble angel hair pasta) Scoop about a cup of the squash onto a plate and top with the tomato mixture. Makes 6-8 servings.
