Sweet Tequila-lime Chicken

3 garlic cloves, minced1/4 cup tequila1 tsp grated lime rind1/4 cup fresh lime juice2 tablespoons light brown sugar1/4 teaspoon salt1/8 to 1/4 teaspoon ground red pepperCooking spray4 (4-ounche) skinless, boneless chicken breast halves
1. Combine first 7 ingredients in a bowl; stir well. Set aside.
2. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken; cook 4 minutes on each side or until browned.
3. Add tequila mixture; bring to a boil. Cover, reduce heat, and simmer 8 minutes. Uncover, turn chicken, and simmer 2 minutes or until chicken is done and sauce is thickend.
Serving size: 1 chicen breast half and 1 tabespoon sauce.
