Banana Blueberry Bran Muffins

Ingredients
3/4 c Wheat Bran3/4 c Oat Bran(or use 1.5 cups wheat bran)1/2 c canned coconut milk1/2 c water1 T lemon juice1 medium very ripe banana, mashed(or use 1/2 c unsweetened applesauce)2 egg whites1/3 c honey (use up to 1/2 c if you prefer a sweeter muffin)1 t vanilla extract1/2 c whole wheat flour1 c white flour1 t baking soda1 t baking powder1/2 t salt1.5 c frozen blueberries
Directions
Mix brans, coconut milk, water and lemon juice. Let stand 10 min.

While standing....

Preheat oven to 375* Greese muffin cups or line with paper.

Stir together flours, baking soda, baking powder and salt. Fluff with fork or sift.

In seperate bowl, beat together banana, egg whites, honey and vanilla. Beat in bran mixture. Add flour mixture, stirring until just blended. Fold in blueberries

Bake 375* for 20 minutes. Makes 10 muffins at 138 calories each.
