Ingredients
2 tsp. bacon grease.5 cup chopped raw onion1 cup yellow cornmeal3 eggs beaten1 tsp salt1 tbsp sugar1 cup evaporated milk3 cups water
Directions
Spread cornmeal on cookie sheet and place in oven to heat while preparing other ingredients. Melt bacon grease. In a large measuring cup, beat the eggs with salt & sugar. Beat in the milk and water. Saute onions until clear. Add heated cornmeal and stir to evenly mix. Gradually stir in the liquid mixture. Heat and stir until thickened. Pour into baking dish, cover and bake 30 - 40 minutes, until edges just begin to brown. Excellent served with a dollop of yogurt.
