Almond Pesto Chicken

Ingredients
3 Tbsp. olive oilGreen onions or 1 small yellow onion1 large or 2 small jalapeno peppers3 cloves of garlic1 tsp. of cuminJuice from half of a lemon1/4 cup of almonds1 bunch of fresh cilantro1-2 lbs. of chicken or shrimp

Step 1 - Cut chicken into strips, cut off any excess fat
Step 2 - Place the rest of the ingredient into a food processor. Blend until smooth.
Step 3 - Cover chicken with almond pesto mixture.
Step 4 - Bake at 350 for 20-25 minutes. Should have a moist texture. Garnish with sliced avocado and grape tomatoes.
