Sim's Red Curry Thai Curry (Chicken)

Ingredients
1 can coconut milk2 chicken breasts, diced 1/2 cup chopped/diced green bell peppers1/2 carrots1 small onion sliced2 Tbsp of red curry paste2 Tbsp Oil2 cloves garlic1 tsp ginger paste/grated ginger root
Directions
1.Heat oil in a wok
2. Add onions, and cook for a few minutes until translucent
3. Add carrots and green peppers, and cook
4. Add garlic and ginger paste
5. Add chicken and cook until no longer pink
6. Add coconut milk, and simmer for 5 mins

Serve with rice
