Ingredients:*Beef Bone Marrow, 2 oz (remove)Hard Rolls (includes kaiser), 2 roll (3-1/2" dia) (remove)Bread crumbs, dry, grated, plain, .25 cup (remove)Pepper, black, 1 tsp (remove)Nutmeg, ground, 1 tsp (remove)Parsley, dried, 1 tbsp (remove) First put the 2 kaiser rolls and water and let them soak really well. Then squeeze most of the water out and put in a bowl. Add the spices and importantly the egg. Mix well and set aside.Push the marrow out of the bones and melt it in a small pot until its all liquid. remove pot from heat and let cool for a few minutes. strain the liquid marrow in the bowl with the bread mixture. Add parsley and 4 tablespoons of breadcrumbs and mix. If the mixture sticks to your fingers it is still too wet.Add 1 or 2 more tablespoon of breadcrumbs. Mixture should not stick to your fingers.Form 40 -60 small dumplings. It's better to let them set in the fridge overnight. When ready to use put as many as desired in boiling broth (they are done when they swim on top).If you have more than you need put in the freezer.
