Hungry Girl's Peanut Butter Oatmeal Softies

1/4 c brown sugar, not packed1/4 c reduced fat peanut butter, room temperature 2 T Splenda2 T light butter (I used Land O Lakes light butter with Canola Oil)2 T cinnamon applesauce2 T egg substitute1/4 t vanilla extract1/3 c whole wheat flour1/2 t baking powderdash salt3/4 c old-fashioned oats
Preheat oven to 350 degrees. In a bowl, combine brown sugar, peanut butter, splenda, butter, applesauce, egg substitute, and vanilla extract. Mix thoroughly with wire whisk. Add flour, baking powder, and salt. Stir until completely mixed. Add oats and mix until they are thoroughly coated with batter. On a baking stone, spoon batter into 6 evenly spaced mounds. Using the back of a spoon, spread and flatten batter into circles about 3 1/2 inches wide. Bake for about 10 minutes, checking after 8. It took about 13 minutes in my oven. Really, really good with LOTS of peanut butter flavor!
