Asian Cole Slaw

Ingredients
1/4 cup sugar/sodium free rice vinegar2 Tbs. low-sodium soy sauce2 Tbs. sesame oil1/4 tsp. crushed red pepper flakes1/4 cup sliced green onion (scallion)1 pkg. coleslaw mix1 Tbs. parsley3 tsp. sesame seeds, toasted
Directions
In a large bowl, whisk together rice vinegar, soy sauce, sesame oil, crushed red pepper and green onion. Add coleslaw mix and toss to coat. Sprinkle parsley and sesame seeds on top and toss gently to mix in.

Makes 5 (1-1/4 cup) servings

Note: I like to add water chestnuts, mandarin oranges and chicken to this for a main dish-yum!
