Glazed Sweet Potatoes

Ingredients
1 Large sweet potato5 tsp Brown sugar 2 T butter or butter substitute 2 oz unsweetened apple sauce1/2 oz walnuts (about 7 halves)1/2 oz raisins ( about 30) sprinkle of cinnamon
Directions
Peel and cube one sweet potato - about 1 inch square pieces

In a small bowl put about one tablespoon of melted butter or butter substitute ( I use smart balance original). Add enough brown sugar to make a thickish paste and then add about 2 oz of unsweetened apple sauce (about half of one of those individual cup servings). Sprinkle with cinnamon and mix.

Put sweet potatoes and raisins in a pan and toss with sugar/apple sauce mixture. Cover and cook in oven at 375 degrees for one hour.

In a small skillet melt about 1 tablespoon butter substitute and mix in brown sugar to make a thick paste. Add as many walnuts or pecans as you like and cook for about 5 min over lowish heat.

When sweet potatoes are done cooking put them in two small desert bowels and spoon the walnut sugar mixture over the top. You can also add a bit of granola on top if you like.
