5 large potatoes, skin on1 cup Grated parmesan cheese1/2 tsp salt1/4 tsp. pepper(could also add paprika or chili powder, anything you think would spice it how you want it)
Scrub potatoes, slice in half length ways then slice in appr. 4 slices lengthways. Put in water and micro for 10-15 minutes. Until they start to soften but are still a little crisp.
Line a large cookie sheet with tin foil and spray with non stick spray. Preheat oven to 350.
Put the cheese and spices in a large zip lock bag.
Drain the water off the potatoes and add 1/2 of them to the bag, shake. Place on prepared sheet.
Repeat with remaining potatoes.
Bake covered for 10-15 minutes. Then put them under the broiler for 3-4 minutes.
