Chicken Vegetable Soup with Tortellini

3 to 4 Chicken BreastsChicken Stock 8 cups2 cloves garlic, chopped1 cup diced onions2 large red potatoes, diced2 cups sliced carrots1.5 cups (dry) tortellini (cheese and spinach)WaterProvencal herbssea saltfreshly ground black pepper
Place chicken in crock pot with chicken stock, garlic and onion and 1 tsp of the Provencal herb mixture. Cook on low for 8 hours. Turn the crock pot to high and shred the chicken. Add potatoes, carrots and extra water if needed. Add salt and pepper to taste. Simmer for 2-4 hours more. I
10 minutes before serving, add the tortellini and simmer until tender. Serve hot.
