Minute RIce Chicken Primavera

Ingredients
3/4 lb. boneless, skinless chicken breasts, cut into strips1 cup broccoli florets1/2 cup frozen green peas1 large carrot, cut into julienne strips1 small red onion, chopped1/2 t. dried basil leaves1/8 t. pepper1 1/2 cups Minute brown rice, uncooked1/4 cup grated Parmesan cheese
Directions
Spray large skillet with cooking spray. Over medium-high addd chicken; cook and stir until browned. Add broccoli, peas, carrots and onions; cook and stir until vegetables are tender crisp.

Stir in broth, basil and pepper. Bring to boil. Stir in rice. Return to boil. Reduce heat to low; cover and simmer 5 minutes. Stir in cheese. Makes 4 servings.
