Low Fat Imitation Crab Cakes

Ingredients
1/2 lb. Imitation crab meat2 T. Trader Joe's Reduced Fat Mayonnaise2 T. Bread Crumbs, dry, grated, plain1 t. Worcestershire Sauce2 T. Lemon Juice1 egg1 oz. Cabot 75% Light Vermont Cheddar, gratedOlive oil cooking spray
Directions
Preheat broiler.

Shred the crab meat to desired texture. Mix in bread crumbs.

In a separate container, whisk together Worcestershire sauce, lemon juice, mayonnaise and egg.

Combine well-whisked liquids with crab and crumbs and mix well. Using your hands, form mixture into balls, and then flatten.

Spray a small cookie sheet with olive oil cooking spray. Place the "crab" cakes on the cookie sheet and broil until just browning, about 15-20 minutes (flip over half way through).

Sprinkle immediately after removal from broiler with Cabot 75% Light Vermont Cheddar to taste. Allow the cheese to melt well before serving.

    This was a great recipe. Ended up having to put more bread crumbs in than recipe calls for because it seemed a little to liquidy. I used Kraft 2% cheddar cheese. Very good recipe and you don't need any tartar sauce. - 11/24/09
