Ingredients
4 eggs1 tsp parsley1 ripe red tomato1/4 cup of feta cheeseSalt (as desired)
Directions
Crack the eggs and whisk. Spray pan with Pam and heat up while whisking (preheating pan will keep the eggs from sticking). Pour eggs into pan. Cut the tomato, try to leave the wettest parts of the tomato out of your collection. Add the tomato to the eggs in the pan. Sprinkle the parsley over the top. Now you need to start lifting a side at a time of the omlet and letting the liquid pour under the side (this will cook your whole omlette). After most of the liquid egg parts are at the bottom of the pan. Add the feta cheese to the top. If the bottom seems solid and the top seems mostly cooked (a little liquid is okay, you don't want the omlet to be too dry). Flip one side over the other so you fold the omlet. Cut in half and serve! Add salt to taste.

Excellent - I also added Gyro meat. It did change the calorie count but you had the basics there for me. Thank you! - 9/10/12
