Diva Breakfast Cups!!

4 egg whites 1 cup of diced green peppers 1 cup of diced onions (insert your favorite veggies) 6 slices of deli turkey pastrami, turkey "ham" or turkey bacon (just cook your bacon prior) salt & pepper to taste (garlic pepper is my fave!) a little bit of water (not an exact measurement lol) 1/4th cup of your favorite low fat cheese (I used monterray jack)
Preheat oven to 350 degrees. Take a mini muffin pan with 12 outlets (or a regular sized pan that holds 6 muffins/cupcakes) and spray with pam spray. Completely cover the bottom of the muffin holes with slices of your preferred meat, this will act as a base. Mix your eggs, veggies, seasonings and just a dash or two of water (for fluffiness!) in a bowl as you would for a regular omelette. Pour this mixture into each muffin hole until it is 3/4ths filled. Sprinkle each "cup" with cheese on top. Bake in oven for 10-12 minutes until the cups reach your desired firmness and enjoy!
