Whole Wheat Pancakes

Ingredients
Mix all dry ingredietns together. Add milk slowly and mix until the batter is thick, but mostly smooth. Mix in eggs. Melt butter and add to batter, mixing until well incorporated. Pour or ladle onto hot griddle (set electric griddles to 350 degrees) or cast iron skillet (on medium heat) and cook until small bubbles from on the uncooked side. Flip and cook for a few minutes more. Pancakes should be firm on the outside and soft on the inside. You can change out the butter in the recipe for your favorite butter substitute. You may also use 4 egg whites in place of the eggs and skim milk in place of 2%. I have tried to use soy milk and other milk substitutes and the texture does not come out right.
