green eggs and ham

Ingredients
2 small shallots chopped1 10 oz. box frozen chopped spinach8 slices lean ham8 eggs3 tbsps light cream1 - 2 tsp. nutmegsalt and pepper2 tbsp. canola oil
Directions
heat oil in skillet add chopped shallots - heat frozen chopped spinach in microwave - take spinach out put into a towel to squeeze out liquid. add spinach to the shallota with the cream and nutmeg and salt and pepper to taste, stir
in large cupcake pan spray with cooking spray - place a slice of ham into 8 cupcake cups - 1 tbsp. spinach mixture - crack egg in put on top of spinach mixture - HINT: crack each egg into a seperate bowl in case one breaks-you want a whole egg in each cup. cook for 10-12 minutes on 375. Cook longer if you want a fully cooked yolk.
