Vegan Pumpkin Bread Pudding

Ingredients
1 Cup Coconut Milk2 Cups Pumpkin, Canned Puree1/2 Cup Brown Sugar1 1/2 tsp Cinnamon1 1/2 tsp Nutmeg1/2 tsp Ground Ginger10 Cups Day-old White Bread, Cubed2 TBS brown sugar
Directions
Preheat Oven 350 F

Spray a 9X13 baking dish with cooking spray.

In a large bowl, mix wet ingredients, spices and 1/2 cup brown sugar. Add bread cubes and stir until cubes are well coated. Pack into prepared baking dish.

Sprinkle with remaining brown sugar.

Bake for 25 to 30 minutes.
