Almond Flour Pancakes

Ingredients
2/3 cup cottage cheese3 large eggs1/2 cup almond meal (or almond flour)1/8 tsp. vanilla extract1/8 tsp. ground cinnamon
Directions
Combine all ingredients in large mixing bowl. Beat until smooth. Heat non-stick griddle or large non-stick skillet. For each pancake, pour about 3 tablespoons of batter from a large spoon or from pitcher onto hot griddle. Sprinkle with oat bran. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden brown. Makes 6 servings.

    I give it a 5 * because it is so easy to do it and so flexible to adapt.
    I did replace cream cheese with feta cheese and added a good table spoon of raisins. It did blend easy and get a nice like pancake texture and nice presentation.
    I am a lousy cook but this one it is very rewarding. - 5/5/20

    I thought the consistency was too liquidy, so added a little coconut flour. Next time I'll use a blender to mix....the cottage cheese was too lumpy this way and the "pancakes" looked like scrambled eggs. Taste was delicious! Esp. with maple syrup!! - 2/28/19
