Jer's Jambalaya

3 tbsp olive oil1 medium onion, chopped1 green or red bell pepper, chopped1/2 lb smoked sausage, quartered and sliced(2) 4oz boneless, skinless chicken breasts, cubed1 tsp dried thyme1 tsp cayenne pepper1 tsp fresh ground black pepper4 tsp minced garlic2 cups rice (Uncle Ben's Original Parboiled Long Grain)3 tsp chicken boullion granules6 cups water
Heat oil in large saucepan on medium heat, then add onion, bell pepper and sausage. Saute until onions are translucent and sausage is crisp. Add chicken and saute until lightly browned. Add garlic, thyme, pepper and rice. Cook briefly to fry rice briefly, then add water and boullion. Bring to a boil then reduce heat to medium for 20-30 minutes until water is completely soaked up, stirring frequently. Allow to cool 5-10 minutes before serving.
