Mom's Potato Soup

Ingredients
Directions
1. Potato, raw, 4 large (3" to 4-1/4" dia.), Peeled, large diced2. 1 Large Onion, sliced thinly3. Milk, 2%, 1 cup4. Butter, salted, 3 tbsp, separated
1. Just cover potatoes in water and boil until tender
2. Saute onions in 1 Tbs of the butter until soft and lightly browned
3. Mash or bend the potatoes into their cooking water along with all remaining ingredients.
4. Salt and pepper to taste (great with LOTS of pepper)
