Pumpkin Pie Pancakes

Ingredients
1/2 cup sugar2 tsp pumpkin pie spice1/2 cup egg beaters1-15 oz. can pumpkin (NOT the pie mix)1-15 oz. can evaporated milk, nonfat2 cups heart smart bisquick mix
Directions
Mix sugar, salt, cinnamon, ginger and cloves in a small bowl. Stir together egg substitute, pumpkin and sugar-spice mixture. Gradually whisk in evaporated milk. Stir in baking mix, one cup at a
time.

In 1/8 cup portions, pour onto an electric skillet pre-heated to 325F and sprayed with butter flavored non-stick cooking spray. Cook on first side for 5 minutes, flip, and cook for 2 more minutes. (You can also cook on a nonstick skillet heated on low.)

Makes 32 pancakes
