southwest White Chicken Chili

1 tbsp vegetable oil4 boneless skinless chicken breasts4 tsp chili powder2 tsp ground cumin1 large onion1 medium green bell pepper (about 3/4 cup)1 can (10.75 oz) Campbell's Cream of Chicken soup3/4 cup water1.5 cups frozen whole kernel corn2 cans (about 15 oz each) white kidney beans, rinsed and drained2 tbsp shredded Cheddar cheese
Heat oil in a saucepan over medium-high heat. Add chicken, chili powder, cumin, onion and pepper and cook until chicken is cooke through and vegetables are tender, stirring often.
Stir in soup, water, corn and beans in saucepan and heat to a boil. Reduce heat to low. Cover and cook 5 minutes, stirring occasionally. Sprinkle with cheese.

I got this recipe from a coupon section 4 Campbell soup. Its also on their website campbellkitchen.com. We love it and have it at least 2 0r 3 times a month. Calorie count is different, but I think here they count 1 serving a cup. Campbell's is 1 1/4 cup. Thanks 4 making it easy 2 add 2 my tracker. - 2/22/13
