Country-Style Chicken Salad

1 1/2cup cooked chicken breast, diced , or 1-12 ounce can of chicken or turkey, drained (or turkey breast) 3/4cup chopped apples , peeled and diced, about 1 medium (Granny Smith) 6tbsp fresh chopped celery 1/4cup chopped pecans , toasted 1/4cup light mayonnaise (or nonfat) 3tbsp sour cream, nonfat (or light) 1pinch white pepper
1 Toss the chicken, apples, celery, and pecans in a large bowl.
2 Stir the mayonnaise, sour cream, and white pepper in a small bowl.
3 Add the mayonnaise mixture to the chicken mixture and toss to mix.
4 Cover and chill for a minimum of 2 hours prior to serving.
5 Use as a sandwich filling, serve over a bed of fresh salad greens, or use to fill a cantaloupe half.
