Hope' Skinny Pancakes

Ingredients

1/2 cup cottage cheese1/2 cup egg whites1/2 cup oatssplenda1tsp cinnamon
In a food processor add the oats, sugar and cinnamon. Mix for 30 seconds.
Then add the cottage cheese and egg whites. Mix for another 30 seconds.
Put have olive oil in non stick frying pan. Pour or spoon mixture to form 4 pancakes. Cook for 1 minute and flip. Cook for another minute and they are done. Repeat with the remaining mix.
Makes 7-8 pancakes depending on the size.
I use this recipe for one serving.

I was skeptical of this recipe, because I do NOT like cottage cheese...but I tried it anyway, and I really liked it! I did not use any syrup, as there are enough calories in these to begin with, and found it was good enough w/cinnamon. LOVE the amount of protein in them for the morning. Very good! - 3/22/11

I tried another recipe similar to this one that was very runny. This one was the prefect consistancy. I'll use a little more sweetener next time so I won't need as much syrup. Also, I'll use Pam to spray my pan instead of the olive oil.
