Turkey al la King

Ingredients

4 Tbs butter or margarine1/4 cup shredded carrot1 cup (more or less) frozen peas2 - 3 oz cans mushrooms1/4 cup flour1 cup chicken broth (I use home made). Use low salt.1 cup low fat milk (receipe calls for half-and half)1 large canned red pepper (can use fresh or subsitute 1 - 2 oz jar pimientocan add1/4 cup celery1/4 cup onion1/2 tsp salt
In med saucepan,melt butter or margarine
Add carrot, celery and onions (if using)
cook over medium high heat, heat until vegs are tender, stirring occasionaly.
Blend in flour and salt (if using salt)
Add broth (If using frozen homemade, defrost and melt for the liquid.
Add milk or half-and-half
sir constantly over medium high heat until mixture thickens and bubbles.
Sir in turkey (can use chicken)
Stir in mushrooms (recipe calls for one can, normally we add 2 cans)
stir in red pepper (we get it in a jar from Trader Joes) or pimento
Serve with popovers or rice or even pasta.
