* 2 cups whole-wheat flour * 2 cups all-purpose flour, plus more for dusting * 1 teaspoon baking soda * 1 teaspoon salt * 2 1/8 c nonfat milk * 2 T vinegar

Substitute nonfat milk and vinegar for buttermilk! Let mixture stand for 5 minutes before using to allow it to curdle.

GOINGSKIING
I had some sour milk that I didn't want to waste and made this bread. I used a food scale and metric measurements (480 g flour, 18 oz milk). Also used White 100% whole wheat flour & no AP flour. Oh... and I baked it in a loaf pan.
