Directions
Zucchini, 3 cup choppedSweet peppers (bell), 2 cup, choppedOnions, raw, 1 cup, sliced Feta Cheese, .5 cup, crumbled *Tomatoes, red, ripe, raw, 1 cup, chopped Couscous, 2 cup, cooked Olive Oil, 2 tbsp *Chickpeas (canned), 1 can *Yams, 3 cup, cubes
Chop vegetables. Toss with oil, salt to taste, and feta and chickpeas. Roast veggies for aout one hour at about 375 degrees. Cook couscous and add just before serving.
