Irish Soda Bread

Ingredients
1 cup golden seedless raisins (not packed) 1 cup Raisins (not packed) 4 1/2 cups Flour 1 tsp Baking Soda 1 tsp Baking Powder 1 tsp Salt 1/2 cup Sugar 3 tsp Caraway Seed 1 stick salted Butter 1 egg 1-3/4 cups buttermilk (you can make buttermilk by adding 1T vinegar to 1C milk). Make 2 cups this way but only use the 1-3/4 c. Or buy buttermilk in the store.
Directions
Rinse and drain raisins in warm water. Mix together flour, baking soda, baking powder, salt, and sugar. Mix in the raisins and caraway seeds. Cut in the butter. Add egg and buttermilk. Mix well and stir into flour. Turn dough onto lightly floured board. You can also use the counter or wax paper. The dough will be VERY STICKY. Knead lightly one minute. Divide into 2 pieces and shape into 2 round loaves. Place on greased cookie sheet or 2 round layer cake pans. Cut an X in the top and prick with a fork.
Bake @ 375 for 30 mins. Reduce heat to 350 and bake 30 mins longer. Remove from oven to cooling rack and rub top lightly with butter.
