Poached Peaches in Grand Marnier with Cheat's Creme Anglaise

Ingredients
8 just-ripe peaches1/2 cup caster sugar1/2 cup brandy600ml orange juice1 cup Grand Marnier600g good-quality vanilla custard300ml thickened cream1/4 cup icing sugar1/2 cup Grand Marnier
Directions
Place custard, cream, icing sugar and 1/2 cup Grand Marnier in a bowl and stir well to combine. Chill until ready to serve.

Place peaches in a large heatproof bowl. Cover with boiling water and leave for 30 seconds. Remove peaches, allow to cool slightly then peel. Set aside.

Place sugar and 1 Tbl water in a pan over medium-high heat. Cook for 3-4 minutes, without stirring, until a golden caramel. Carefully add brandy, juice and 1 cup water. Bring to a simmer, stirring to dissolve sugar, then carefully add peaches. Reduce heat to medium-low and simmer for 10 minutes until tender. Remove peaches with a slotted spoon.

Increase heat to medium and simmer for 10-15 minutes or until reduced by two-thirds. Return peaches to the syrup, then remove from heat. Chill for 30 minutes.
