BREAD:2/3 cup shortening2-2/3 cup brown sugar4 eggs1 15-oz can pumpkin2/3 cup water3-1/3 cup flour2 teaspoons baking soda1/2 teaspoon baking powder1-1/2 teaspoons salt2 teaspoons ground cinnamonSTREUSEL TOPPING:3/4 cup flour1/2 cup brown sugar1/2 teaspoon ground cinnamon1/3 cup butter
Cream shortening and brown sugar in mixing bowl. Add eggs, water, and pumpkin. Mix in flour, baking soda, baking powder, salt and cinnamon. Divide into 2 greased 9x5 loaf pans. In a food processor or with a pastry blender, mix all streusel ingredients until crumbly. Divide in half and top both pans of batter. Bake at 350 degrees for 60-70 minutes or until knife inserted into bread comes out clean. Cool 15-20 minutes before removing from pans; cool completely before wrapping up. Can be frozen.
