Fat Smash Oatmeal Muffins- Phase One

2 1/4 Cups Dry Oatmeal ( I use Quick Oats)2 teaspoons Baking Powder1/2 teaspoon salt3/4 cup of Light Vanilla Soy Milk or if you wish Skim Milk1/3 Cup Splenda2 large egg whites1/2 Cup Unsweetened Applesauce1 teaspoon vanilla extractcinnamon to tasteOptional Additions: Blueberries (frozen or fresh)Banana (mashed or cut into small piece, you can use less applesauce if you add banana.Any small diced fruit of your choosing!
1. Preheat oven to 350
2. Spray muffin pan with non-stick cooking spray or add cupcake liners
3. In large bowl, mix oatmeal, baking powder, salt and cinnamon.
4. Add the rest of the ingredients until incorporated. It will resemble slightly runny oatmeal.
5. Fill each muffin 3/4 full. Bake 15-20 minutes until golden.
