Mediterrean Braised London Broil

1.5 oz London Broil (top round), trimmed1/2 large chopped onion1 tsp dried oregano1/3 cup chopped pitted kalamata olives14.5 ounce can tomatoes, undrained.S
Season beef with salt and pepper.
Heat large dutch oven with cooking spray.
Brown in dutch oven over medium high heat. Brown on all sides, about 10 minutes.
Remove beef from pan. Saute onions and oregano, about 3 minutes.
Return beef to pan, add 1/2 cup water.
Cover and simmer beef with onions and oregano for about 1 hour over low heat.
Add olives and tomatoes and continue simmer for 45minutes to 1 hour until beef is tender.
Serving Size: 4oz beef with 1/3 cup sauce
