Ingredients:Onions, raw, .25 cup, chopped Baby Carrots, raw, 4 large Peppers, sweet, red, raw, sliced, .5 cupAsparagus, fresh, 6 spear, medium (5-1/4" to 7" long) )*green onion (spring onion), 0.25 cup *(V) Squash, Yellow, raw, 1 cup *Quoina, 1/4 cup*Kroger Clear Chicken Broth, 2 cup*Extra Light Olive Oil, 1 tbsp Salt, 1 dashPepper, black, .25 tsp Pepper, red or cayenne, .25 tspGarlic powder, .5 tsp Parmesan Cheese, grated, .25 cup
Over medium heat, Saute onion, red bell pepper, carrots, in olive oil, for about 3 minutes, add remaining vegetable and stir,cook an additional 5 minutes, add spices and quinoa, stir, now add in broth, reduce heat and allow to simmer on low for approx. 20-25 minutes, until all liquid is absorbed. Sprinkle with parmesan just before serving.
