Ingredients
1 whole wheat english muffinSmart balance spread1 egg1/2 c liquid egg whites1 oz shredded mozzarella cheese, part skim1 Tbsp salsa
Directions
Toast english muffin. While it's toasting beat the egg and whites, then scramble over med-high until done. Remove from heat; Fold in cheese and salsa. Spread smart balance on muffin halves, top with egg mixture. Eat!
