Southwestern Salad

Ingredients
1 can of black beans rinsed1 can of corn rinsed1 can of diced tomato rinsed1 jalapeno seeded and diced1 avocado diced1/2 sweet onion diced1/4 cup olive oilCilantro snipped to tasteSalt to tastePepper to tasteCumin to tasteGarlic to tasteFresh Lime
Directions
Throw beans, corn, toms, jalapeno, avocado and sweet onion in a bowl. Pour olive oil and give it a stir. Snip a generous amount of cilantro if you like cilantro...if you don't leave it out or add just add a small amount. Stir and taste. Add salt, pepper, garlic and cumin to taste. Squeeze fresh lime over all and give it a good stir. Refrigerate for a couple of hours until chilled and flavors have melded.
Makes 11 1/2 cup servings.
